When processing honey, sieves are used to filter the honey. These sieves come in various designs. The most common is the stainless steel honey sieve with a domed bottom. It also comes with a flat bottom so it sits less deep in the bucket, allowing more honey to fit in the bucket. In addition, there are conical sieves that provide very fine filtration and can be placed on the honey bucket.
When honey is stored it will begin to crystallize. The rate of crystallization depends on the glucose and moisture content of the honey. Honey with a low glucose content crystallizes very slowly. Honey with a high glucose content, on the other hand, crystallizes quickly, for example honey from rapeseed (canola), dandelion, or fruit blossom.
Creamed honey is honey with fine crystals. Almost any honey will crystallize, but under controlled conditions you can create beautiful creamed honey. Beekeepers use honey gates for filling honey jars. Because honey is very sticky and viscous, a honey gate is the ideal valve. Some models allow you to convert a standard bucket into a honey ripener for easy honey filling.
